• Chill a cocktail glass.

• Combine all ingredients in a mixing tin without ice. \”Dry shake\” for 25 seconds. Then add ice and shake vigorously for an additional 25 seconds.

• Strain into the chilled glass and garnish with a generous lemon twist.

*Simmer 1 part water and 1 part sugar until dissolved. Remove from heat and allow to cool.

2 oz. pisco
¾ oz. lemon juice
1 oz. simple syrup*
1 egg white
2 dashes Angostura bitters
Lemon twist for garnish
