Peel, then coarsely grate the sweet potato. Place in mixing bowl.
Core the apple, then cut in small pieces, skin on and add to sweet potatoes. Toss with lemon juice. Add cranberries and walnuts and mix.
Mix maple syrup, mayonnaise and sour cream together until smooth.
Coat the sweet potato mixture with just enough dressing to hold together. If needed, mix additional dressing.
