• Heat a saucepan over medium heat. Place the olive oil and garlic in the pan and sauté for 1 minute.

• Add the tomatoes and simmer for 20 minutes.

• Add the remaining ingredients and simmer for another 10 minutes. Cool and reserve.

1 Tbsp. olive oil
1 Tbsp. chopped garlic
6 plum tomatoes, cored, scored, blanched, seeded and rough chopped
1 tsp. chopped thyme
2 Tbsp. honey
1 Tbsp. balsamic vinegar
