The oak cask finishing adds light sweetness and vanilla touches to a gin base that holds citrus, floral and subtle juniper notes. This versatile gin can be the star in a G&T or the surprise substitute in a bourbon cocktail. Try it in a Gin Brown Derby: In a shaker, combine 2 ounces gin, ¾ ounce grapefruit juice and ½ ounce honey syrup (Heat equal parts honey and water until the honey dissolves and let cool.). Add ice, shake and strain into a chilled cocktail glass. Garnish with a grapefruit twist.
