Katie Lee, founder of Katie’s Pizzeria at 6611 Clayton Road in Clayton, has a new project. Her latest venture is Katie’s Pizza and Pasta, an artisan pizzeria and pasta house – complete with wood-fired oven and an open kitchen – featuring pastas, mozzarella and cured meats, all prepared in-house. Working with Lee on the new restaurant is her fiancé Ted Collier.
Lee informed The Scoop that she will be announcing Katie’s Pizza and Pasta on the Katie’s Pizzeria Facebook page within the next 10 days to two weeks. She is hopeful that a grassroots community effort via a Kickstarter campaign will enable her to open the restaurant’s doors (at a to-be-named location) by early summer. A link to the fundraising site will be posted on the Katie’s Pizzeria Facebook page when Lee makes the announcement, which will mark the start of the campaign.
