INGREDIENTS

2 eggs
½ cup sugar
½ cup heavy cream
3 cups whole milk
Pinch of salt
1 Tbsp. pure vanilla extract
1 can sweetened condensed milk
½ vanilla bean, split lengthwise and scraped (optional)

PREPARATION

• Bring a pot of water to a simmer.

• Whisk together the eggs, sugar and heavy cream in a metal or glass mixing bowl. Place the bowl over the simmering water. Whisk constantly until the mixture is warm to the touch.

• Remove from the heat and place into the bowl of an electric mixer. Mix on medium speed for a couple of minutes. Drizzle in the milk. Add the salt, vanilla extract, sweetened condensed milk and vanilla bean, if using. Mix until well-combined.

• Chill the mixture until cold. Process according to the ice cream maker’s instructions.
