Daikon, apple and edamame slaw
Ingredients
1 Tbsp. toasted sesame seeds3 Tbsp. rice vinegar
2 Tbsp. soy sauce
2 Tbsp. sesame oil
2 tsp. sambal oelek
4 green onions (white and green parts), thinly sliced
1 large daikon radish
1 medium Red Delicious apple
1 cup edamame
Preparation
• Using a mortar and pestle or a spice grinder, grind the toasted sesame seeds to a powder.
• In a small bowl, stir together the ground sesame, vinegar, soy sauce, sesame oil and sambal oelek. Add the green onions. Set vinaigrette aside.
• Peel the daikon radish and cut into 2-inch sections. Slice each section lengthwise into ¼-inch strips, and then cut each strip into matchsticks (You should have about 2 cups of daikon pieces.) Set aside.
• Quarter the apple, cut the core away from each quarter, then cut the quarters into thin matchsticks about the same size as the daikon pieces.
• Put the daikon and apple in a large bowl. Add the edamame. Pour the vinaigrette over the slaw. Toss and serve.
