Ska Brewing Modus Hoperandi is an
American IPA from Ska Brewing Co. in Durango, Colo., and has plenty of hoppy flavor. In this unique flavor combination, hemp oil adds nuttiness and black garlic lends a touch of its signature sweet molasses flavor. Hops tossed into the half-empty beer can act as an aromatic, steaming the inside of the chicken to create a floral, umami flavor.

Ingredients

Salt
½ cup hemp oil
3 to 4 cloves black garlic, minced
¼ to ½ ounce green hops (available at St. Louis Wine and Beer Making)

Preparation

Sprinkle salt inside the bird’s neck and main cavity and on top of its skin.

Cover the entire bird with hemp oil, then rub minced black garlic all over the skin.

Add the hops to the half-empty beer can before assembling the chicken for grilling.

• Proceed with the basic recipe.
