Strawberry Soup
Ingredients
3 cups strawberriesGranulated sugar, to taste
1 cup orange juice
4 fresh mint leaves (optional)
Preparation
• Wash and hull ripe or overripe strawberries. Slice thin, and in a small bowl, toss them with just enough sugar to barely coat the surface of the berries. Place the berries in a freezer bag and refrigerate overnight.
• The next day, place the macerated berries with the orange juice and mint, if using, in a blender. Blend to desired consistency.
• Serve chilled with vanilla yogurt or a dollop of sweetened mascarpone cheese.
