Poached Salmon with Mustard Sauce
Ingredients
1 Tbsp. mayonnaise½ Tbsp. plain yogurt
½ Tbsp. sour cream
1 tsp. mustard
½ tsp. freshly grated ginger
¼ tsp. honey
4 6-ounce salmon fillets
Minced chives
Preparation
• Combine the first six ingredients in a bowl. Mix until combined and set aside.
• Fill a wok with 2 inches of water. Set over high heat and bring to a boil.
• Once boiling, add the salmon fillets to the wok and reduce the heat.
• Simmer until the fish is slightly translucent, about 8 minutes.
• Remove from the pan, drain and pat dry.
• Spoon the sauce over the salmon and garnish with freshly minced chives.
