Short List Runner-Up: Sweetbreads

Sidney Street Café This is the one that got away: Nicely crispy on the outside and tender on the inside, with great winter flavors. There was just a touch of acid and sweetness in the apple cider gastrique to compliment the faintly bitter Swiss chard, all rounded out by spiced pecans. Sidney Street turned out a thoroughly impressive dish. Though not originally eligible for the top three (this dish did not exist at press time), the dish is certainly worth a stop if you’re cruising St. Louis’ unofficial offal district and is simply more evidence that our chefs are well schooled in the Pancreatic Method way of thinking. 2000 Sidney St. St. Louis, MO 63104 314-771-5777
