Gerard Craft’s Brass Burger announces four-month residency at Urban Chestnut in Midtown St. Louis

Gerard Craft’s Niche Food Group has announced a four-month spring residency for Brass Burger at Urban Chestnut Brewing Co.’s Midtown location at 3229 Washington Ave. The residency will run from Mar. 1 through June, with a menu featuring the Brass Burger itself alongside a fried chicken sandwich, chili, shoestring fries and more.

The BrassBurger has proved a durable and wildly popular menu item for the Niche group. A longstanding staple of the menu at Brasserie by Niche, the burger proved a huge hit during the Niche-operated BrassWell food window's five-year run at Rockwell Beer Co. BrassWell closed in January 2024, with Rockwell bringing food operations in-house and launching an all-new menu. The Brass Burger is also served on matchdays at St. Louis City SC’s CityPark stadium. 

Brass Burger’s menu at Urban Chestnut will, of course, be headed by the burger itself, topped with American cheese, dijonnaise, dill pickle and onion. Also on the menu will be a fried chicken sandwich, with toppings include arugula, house pickles, hot honey and crystal aioli. The Moonbase chili is a beef chili with jalapenos and cotija, and the menu is rounded out by a house salad, shoestring fries, and Companion pretzels served with wholegrain mustard and beer cheese. For dessert, a rotating seasonal soft serve will be available.

A statement from Niche executive chef and owner Gerard Craft welcomed the opportunity to bring Brass Burger to Urban Chestnut. “We’ve had a longstanding relationship with the Urban Chestnut team, and we’ve always talked about finding the right way to work together,” Craft said. “They serve some of the best beer in town, and the patio is incredible, so we’re happy to have found a new home for Brass Burger here.”

“We take the quality of our beer seriously, and we are thrilled that Niche Food Group’s Brass Burger is here to take the Midtown experience to the next level,” said a statement from Urban Chestnut co-founder David Wolfe. “It’s great to partner with an old friend on this as well. Gerard and I have been in this game for a long time, and it’s fun to finally do something together.” 

Brass Burger’s residency will begin on Mar. 1 and will run through the month of June. Food service at Urban Chestnut’s Midtown biergarten ended on Feb. 11 in order to prepare for the transition. Brass Burger’s hours of operation at Urban Chestnut will be Wednesday and Thursday from 4 p.m. to 10 p.m., Friday and Saturday from 11 a.m. to 10 p.m., and Sunday from noon to 7 p.m.
